Hey guys! I’ve been travelling in Australia and New Zealand for the past 4 months and I’m finally home and starting to blog again! It was a nice break to spend time with friends and make new ones (and I have some blog posts coming on my time at Bible school) but for now here is a recipe you can add to your Christmas baking list.
I found this DELICIOUS cookie recipe on Pinterest by Broke Foodies (follow me here if you want) and I didn’t think I could follow it, because I RARELY bake, but they turned out so good!!
dry ingredients:
- 1 cup all purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- pinch of salt
wet ingredients:
- 1 flax egg
- 1/2 cup margarine (or vegan butter)
- 1 cup coconut sugar
- 1/2 tsp peppermint extract
- 1/4 cup dairy-free dark chocolate chips
- 1/2 tsp white vinegar (reacts with the baking soda to make them chewy!)
- preheat the oven to 375 and line your pans with cookie sheets
- in one bowl, mix all the dry ingredients and in another, beat the butter, sugar and flax egg
- add in the peppermint, vinegar and mix again
- add your dry ingredients to your wet mixture and gently mix with a wooden spoon/spatula until doughy then add chocolate chips
- roll into balls and place on cookie sheets then bake for roughly 10 minutes!
- I LOVE these cookies and even add ice cream in the middle to make my own dairy-free ice-cream sandwiches 😉
