I was on the hunt to create delicious, chewy, chocolate chip cookies that were still healthy(ish) and vegan and I came up with this!
I found this recipe in a vegan cookbook and adapted from there 🙂
You will need:
- 1 & 1/3 cups all purpose flour
- 1/2 cup melted coconut oil
- 1/3 cup packed brown sugar
- 1/4 cup coconut palm sugar
- 1/4 cup almond milk
- 1 tbsp cornstarch
- 1/2 tsp baking soda
- 2 tsp vanilla extract
- 1/3 cup chocolate chips
- pinch of salt
Preheat the oven to 350º and get your bowl (or Kitchenaid in my case) ready.
In a large bowl, mix 1/2 cup coconut oil, 1/3 cup brown sugar and 1/4 cup coconut sugar. Next add in 1/4 cup almond milk and 1 tbsp of cornstarch and mix again then add the vanilla.
Add in the salt, 1/2 tsp baking soda and then slowly mix in the flour. When it resembles cookie dough, stir in chocolate chips and start scooping onto a pan!
Bake for around 14 minutes. Let cool before transferring to a cooling rack, then start eating! Makes around 20 cookies depending on how big you make them 😉
I’ve finally found a chocolate chip cookie recipe that is easy and the cookies turn out so well, and it’s safe to say these were gone in a few days!
