Hey all! If you know, you know I love easy grab and go snacks because I am always on the go and I made these energy balls the other day and LOVE them!
I also have this similar (cocoa coconut) recipe which I wrote for my old blog, BasicBloggerss
- 1 tbsp cocoa powder
- 1 cup of chopped pitted dates
- 1/2 cup almonds (chopped is best)
- splash of almond milk
- 1 tbsp chia seeds
- 1 tbsp natural peanut butter (not the one that separates)
- 1 tsp cinnamon
- 1 tbsp coconut oil
- 1 tsp vanilla
- food processor!
To make: place ( I always say throw hahah but don’t throw) 1/2 cup of chopped almonds, 1 cup of dates and literally a splash of almond milk in the food processor and mix.
Then add in 1 tbsp chia seeds, 1 tbsp peanut butter, 1 tbsp cocoa powder, 1 tsp cinnamon and 1 tsp vanilla and blend again until you get a sandy consistency.
Once everything is chopped to similar size, add in 1 tbsp of coconut oil and mix until you get a sticky texture and then you’re ready to roll into energy balls!
You can roll them in coconut afterwards if you like but I decided to leave mine as is and put on a tray then in the fridge because they stick together nicer when cold.
