Spinach Oat Muffins (GF & Vegan)

Good morning friends! Recently I have been too busy to make myself smoothies for breakfast every morning but I really want to get my greens in, so I came up with this spinach oat muffin recipe and Iv’e been really enjoying these!

You will need:
  • 2 cups of fresh spinach
  • 3 tsp vanilla
  • 2 tbsp ground flax (or 2 eggs if you’re not vegan)
  • 1/4 cup coconut palm sugar
  • 3 tbsp coconut oil melted
  • 2 cups of oat flour (I’ll tell you how to make your own)
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • one banana
  • 2 dates
  • 1/4 cup shredded coconut

Preheat the oven to 350

In your blender, pour in 2 cups of oats at blend until it has a fine flour like consistency then pour into a medium sized bowl.

Now in your blender, throw in 2 cups of spinach, 3 tsp vanilla, 3 tbsp coconut oil and to make flax eggs, mix in 2 tbsp of ground flax and 5 tbsp of water. Blend until smooth then add a banana and 2 dates.

In the medium sized bowl, mix the flour, 1/4 cup of coconut palm sugar, 1/4 cup shredded coconut , 1 tsp baking soda and 1 tsp baking powder.

Pour the blended mixture into your dry ingredients and mix until all combined.

Pour into muffin liners and bake for 12-14 minutes!
