Oat Date Bars

I recently had an oat fudge bar from Starbucks (so yum) but I knew I could make a healthier, vegan version at home so here it is!

You will need:

  • 20 pitted dates
  • 1 tsp vanilla
  • 1 tsp orange zest
  • 1/4 cup cacao powder
  • 2 cups oats
  • 1 cup almonds chopped
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • pinch of salt
  • 2 tsp cinnamon
  • 1/3 cup brown sugar (or I would try this recipe again with coconut sugar)
  • 1 cup unsweetened coconut
  • 1/4 cup maple syrup
  • 3/4 cup melted coconut oil
  • 1/4 cup hemp hearts

Preheat the oven to 350° and line a 9×13″ pan with parchment paper (easier to get the bars out after) or spray it with oil.

Put the dates in a small pot with 1 1/2 cups of water and let that simmer until the dates break down. Add the vanilla, orange zest and cacao powder, stir, then take off heat.

In a blender, add the almonds, flour, baking powder, sea salt, cinnamon, brown sugar and coconut and mix. Once it’s all mixed together and has a flour resemblance, add the oats and coconut and blend again.

Pour the blenderful into a large bowl and mix with maple syrup, coconut oil melted and hemp hearts and mix together.

Now pour 3/4 of the oat mixture to the bottom of your pan and pour all the date cacao mix into the middle.

Sprinkle the rest of the oat mixture on top and bake for 25-30 minutes!

Once cooled, cut into your bars and enjoy xx

I like putting them in the freezer since I like my baking cold for some reason haha but eat how you please 🙂

I also added my Tropeaka maca powder to my last batch for energy and it tasted a little bit like maca but wasn’t bad!
