Vegan Fettuccine Alfredo Recipe

I have been loving pasta recently with the weather getting colder and I am home more working and doing school online. This recipe I found (inspired by Urban Bliss Life) and adapted it into my own!

Lots of you have been DMing me on Instagram asking for the recipe, so here goes.

You will need:

  • 1/4 cup nutritional yeast
  • fettuccini pasta (around 8 ounces)
  • 3-4 cloves of garlic minced
  • 4 tbsp coconut oil
  • 2 tbsp flour
  • 1 can of coconut milk
  • 1/3 cup vegetable broth
  • 1 tsp dijon mustard
  • 2 tbsp of the hot pasta water
  • fresh parsley

Make your pasta in one pot at the same time as you make the sauce in this pot.

First melt the coconut oil in the pan with the garlic and sauté for a couple minutes.

When the oil is melted, add the flour, coconut milk and vegetable stock and mix until there are no clumps.

Let that come to a boil as it thickens, then add 2 tbsp of the hot water from making the pasta and continue to stir.

Once it has come to the desired consistency, remove it from the heat and add mustard, nutritional yeast, a pinch of salt and pepper. After all the nutritional yeast flakes are mixed in, add your pasta and stir.

Garnish with fresh parsley and enjoy! Feel free to add a protein if desired.
