Happy Tuesday! Today I bring you my family’s famous granola bar recipe. I literally have these every trip we take as they are delicious, on the healthy side and easy to make!
You will need:
- 1 cup coconut oil (or margarine)
- 1/2 cup corn syrup
- 1 cup brown sugar
- 1 cup chopped dried apricots
- 3 1/2 cups quick oats
- 2 tsp cinnamon
- 1/2 cup white flour
- 1/2 cup whole wheat flour
- 1/2 tsp baking soda
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 cup flax seeds
- 1/4 cup sesame seeds
*you can substitute out any seeds as long as the total amount equals 1 cup
Preheat the oven to 350° and line a large cookie sheet (11×13) with parchment paper.
First, melt the margarine/coconut oil, corn syrup and brown sugar together in a pot on medium heat, on the stove until smooth (don’t boil).
Next, in a large bowl, combine all the dry ingredients and stir.
Pour the sugar mixture on top of the dry and mix well until all ingredients are moistened. Pour over the parchment paper and press firmly in the pan.
Bake for 20-25 minutes. For chewy bars bake closer to 20 minutes, or go longer if you like them crispy!
Let cool for 10-15 minutes then cut into bars (30-36 bars). If you wait too long, they become difficult to cut.
The fun thing about making your own granola bars is you can really add whatever ingredients you want for flavour! Just don’t add raisins or coconut because they tend to burn.
My family also loves to cut the outside edges off first (we are OCD hah) and use the little pieces with yogurt!
