Vegan Fudgy Brownie Recipe

I love playing around with recipes and adding different ingredients I like or making a healthier version of treats I already love. Here is my recently found favorite brownie recipe.

You will need:

  • 1 cup all purpose flour
  • 1/4 cup cocoa powder
  • 1 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 2 flax eggs (or regular if you are not vegan)
  • 1 tsp vanilla
  • 1/4 cup unsweetened almond milk
  • 1/4 tsp baking soda
  • dash of salt
  • dairy free chocolate chips to sprinkle in
  • walnuts or coconut to sprinkle on top before baking

Preheat the oven to 350º

In a kitchenaid (large bowl), mix together your flour, cocoa powder, coconut sugar, baking soda and salt.

For your wet ingredients, grab a smaller bowl and mix together your eggs, vanilla, melted coconut oil and almond milk.

Once those are both done, slowly mix the dry ingredients into the wet mixture and dump in chocolate chips at the end- I probably used 1/4 cup.

Line a 9×9 pan with parchment paper and dump in your mixture, spreading evenly.

Bake for 20-25 minutes, until you can stick a toothpick in and it comes out clean. Let it cool before cutting and eating!
