Coconut Rice Pudding

Anyone else love a treat but have health restrictions or not want to feel sick after eating too much? This vegan rice pudding recipe is for you!

You will need:

  • 2 cups of instant rice
  • 1/2 cup coconut sugar
  • 2 tbsp brown sugar
  • 6 cups unsweetened coconut milk
  • pinch of himalayan pink salt
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • a crockpot

Spray your pot with coconut oil spray or spread with vegan butter to grease the outside, then pour everything into the crockpot.

Stir and put on high for 3-4 hours mixing every hour and a half until it looks and smells done! Yes, it’s that easy.

I loved to add coconut shreds, cacao nibs and fruit mixed in for more flavour 😉
