I started Fashion school in Vancouver this past week, which means I need to make my lunch the night before as I wake up super early to be on time and I love easy recipes I can bake on the weekends to snack on throughout the week/month!
I found this recipe from My Gluten-Free Kitchen and adapted it with normal oats and into muffins instead of breakfast squares and dairy free instead of gluten free.
You will need:
- 3 & 1/2 cups of oats
- 1/3 cup brown sugar
- 1 tbsp cinnamon
- 2 tsp baking powder
- pinch of sea salt
- 1 cup almond milk
- 2 eggs
- 1/4 cup coconut oil melted
- 1/3 cup honey or maple syrup
- 1 whole apple diced
- 1 tsp cinnamon
Set the oven to 350°
In a kitchenaid, mix 3 1/2 cups of oats, 1/3 cup brown sugar, 1 tbsp cinnamon, 2 tsp baking powder and a pinch of salt.
Next add in both eggs, 1 cup almond milk, 1/4 cup coconut oil and 1/3 cup of honey.
In a separate bowl, cube the apple and mix with 1 tsp of cinnamon then stir in the apples to the batter and mix until all combined.
Add to a muffin pan, bake for 20-25 minutes and enjoy!!
