Chocolate Chip Zucchini Muffins

Good morning! I loooove going through Pinterest, finding recipes, and changing them to make them my own so today I bring you a post inspired by Two Peas & Their Pod  

You will need:

  • 1 cup flour
  • 1 tsp baking soda
  • pinch of sea salt
  • 1/2 cup brown sugar
  • 1/4 cup coconut palm sugar
  • 1 tsp vanilla
  • 1 egg
  • 4 tbsp coconut oil melted in microwave
  • 1 cup zucchini
  • 2 cups of oats
  • 3/4 cups of dark chocolate chips

Set oven to 350°

In a medium bowl mix 1 cup flour, 1 tsp of baking soda and sea salt.

Next in a Kitchenaid start mixing 4 teaspoons of melted coconut oil, 1/2 cup brown sugar and 1/4 cup coconut palm sugar.

Next add the egg and 1 tsp of vanilla and mix again.

Slowly add in the dry ingredients and mix, then add zucchini and mix again, then 2 cups of rolled oats and mix again and last but certainly not least 3/4 cup chocolate chips!

Add dough to a pan for cookies or because I LOVE muffins, I made muffins in a rubbermaid liner as well.

Bake for 22-28 minutes, let cool and enjoy!

Everything I make I make super easy to grab on my way to work or appointments and these are a super yummy (and healthy right?!) snack or breakfast muffin I’ve been having lately.
