Vegan Chocolate Mint Cookies

Hey guys! I’ve been travelling in Australia and New Zealand for the past 4 months and I’m finally home and starting to blog again! It was a nice break to spend time with friends and make new ones (and I have some blog posts coming on my time at Bible school) but for now here is a recipe you can add to your Christmas baking list.

I found this DELICIOUS cookie recipe on Pinterest by Broke Foodies (follow me here if you want) and I didn’t think I could follow it, because I RARELY bake, but they turned out so good!!

dry ingredients:

  • 1 cup all purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • pinch of salt

wet ingredients:

  • 1 flax egg
  • 1/2 cup margarine (or vegan butter)
  • 1 cup coconut sugar
  • 1/2 tsp peppermint extract
  • 1/4 cup dairy-free dark chocolate chips
  • 1/2 tsp white vinegar (reacts with the baking soda to make them chewy!)
  1. preheat the oven to 375 and line your pans with cookie sheets
  2. in one bowl, mix all the dry ingredients and in another, beat the butter, sugar and flax egg
  3. add in the peppermint, vinegar and mix again
  4. add your dry ingredients to your wet mixture and gently mix with a wooden spoon/spatula until doughy then add chocolate chips
  5. roll into balls and place on cookie sheets then bake for roughly 10 minutes!
  6. I LOVE these cookies and even add ice cream in the middle to make my own dairy-free ice-cream sandwiches 😉
